parmesan chicken and butternut squash

Hey, I’ve got a very tasty and easy meal for you to make and enjoy soon.

Today I present to you Parmesan Chicken and Butternut Squash!

Two things to know about this meal…

One, if you’ve never had butternut squash before then just know that if you love sweet potatoes then you’re going to love butternut squash.  Forget taking the time to peal one, just buy the packaged cubes or fries in the veggie isle of your favorite store.

Two, this is a great meal to make a lot of for future meals, which helps you stick to your nutrition plan very easily.

Makes: 3 servings

Prep Time: 3 hours (mostly marinating the chicken)

Cook Time: 25 minutes




3 boneless, skinless chicken breasts (butterfly cut for better cooking)

1 Egg, beaten

1/2 cup Milk

1 tbsp Lemon Juice

1 1/2 tsp Garlic Powder


1/2 cup Parmesan Cheese, shredded or grated

1 package Good Seasons Italian Dressing Mix

1/2 tsp Garlic Powder

Butternut Squash

2 packages Butternut Squash (fries of cubes)

1 tbsp Olive Oil

1 tbsp Paprika

1 tsp Cayenne Pepper

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Salt


Combine chicken and ingredients for the marinade in a zip lock bag and let sit for at least a few hours.

Pre-heat your oven to 450-degrees.

Prepare two baking sheets with non-stick aluminum foil for easy clean up.  Combine parmesan cheese, Italian dressing, and garlic powder in a mixing bowl.  Bread each piece of marinated chicken with the mixture and place on a baking sheet.

In a separate mixing bowl, combine butternut squash, olive oil, paprika, cayenne pepper, garlic powder, onion powder, and salt.  Toss to coat well.  Spread out over a separate baking sheet.

Bake both the chicken and butternut squat on 450-degrees for 20-25 minutes.  Keep an eye on the butternut squat to make sure it doesn’t burn.  Take out and shift around to prevent over baking.

Remove when done and let cool before eating.

Nutrition Facts: I don’t have any nutrition facts for this one.  Just know that you have a high quality meal built with lean protein, healthy fats, and fibrous carbohydrates making it a great one to have anytime, especially in the evenings when you should be cutting out starch and fruit carbohydrates.
