Hey, breakfast can be pretty boring from time to time. I want to give you a new twist on scrambled eggs that will entice your taste buds.

Let’s take a look at Mexican Egg Scramble…

Makes: 1 serving

Prep Time: 1 minute

Cook Time: 5 minutes


3 Egg Whites (add a yolk if you like)

1/4 cup Black Beans (drained and rinsed)

1 ounce Cheese (whatever type you like)



Scramble egg whites until cooked to your liking. In the meantime, slightly warm-up black beans in the microwave for about 20 seconds.  Add black beans and cheese to scrambled egg whites. Once the cheese is melted, add salsa and enjoy!

200 Calories, 6 grams Fat, 12 grams Carbohydrates, 22 grams Protein.
