Hey cool people!

Let me fire up your weekend with the return of Foodie Friday.

And I’ve got something very seasonal and a healthy alternative to some of those more sugary items you might be tempted with as the holidays approach.

Let’s take a look at Healthy Pumpkin Muffins

Makes: 12 muffins

Prep Time: 5-7 minutes

Cook Time: 18-20 minutes

Ingredients:

1 ½ cups Whole Grain Flour

½ tsp Salt

½ cup Sugar

½ cup unsweetened Applesauce

1 tsp Baking Soda

½ tsp Baking Powder

1 cup canned Pumpkin puree

2 Eggs

¼ cup 1% Milk

2 tsp Pumpkin Pie Spice

Directions:

In a bowl, mix together the milk, eggs, applesauce, pumpkin puree and sugar.

Add whole grain flour, salt, baking soda, baking powder, and pumpkin pie spice.  Don’t over mix.

Fill muffin cups ¼ of the way.  Bake at 350-degrees for 18 to 20 minutes (depending on your oven) or until a cake poker comes out clean.

Nutrition Facts (per serving): 90 calories, 2 grams Protein, 16 grams Carbohydrates, 2 grams Fat, 2 grams Fiber

I actually have not tried these yet, but I like pumpkin, I like muffins, and I like how all the ingredients are all natural, so this should be a good match for some yummy eating later on.
